  3. In a separate bowl, mix together the tomatoes, red onion, green bell pepper, cilantro, and lime juice. Taste and adjust seasoning to your liking.
  4. To assemble the arepas, place one patty on a plate and top with a spoonful of the pico de gallo mixture. Top with crumbled queso fresco and serve.
