This hearty stew is a great meal to make when you need to feed a crowd and is sure to be a hit. Let's get cooking! ## Sopa De Res Salvadoreña Receta #### Ingredients: - 2 tablespoons of vegetable oil - 2 pounds of beef stew meat, cubed - 1 large onion, diced - 4 cloves of garlic, minced - 2 tablespoons of tomato paste - 2 tablespoons of chili powder - 2 teaspoons of cumin - 2 teaspoons of oregano - 1 teaspoon of smoked paprika - 2 quarts of beef broth - 2 potatoes, peeled and diced - 2 carrots, peeled and diced - 2 ears of corn, cut into 1-inch pieces - 1/2 cup of green peas - Salt and pepper to taste #### Instructions: 1. Heat the vegetable oil in a large pot over medium-high heat. 2. Once the oil is hot, add the beef cubes and cook until lightly browned. 3. Add the onion and garlic and cook until softened, about 5 minutes. 4. Stir in the tomato paste, chili powder, cumin, oregano, and smoked paprika and cook for 1 minute. 5. Pour in the beef broth and bring to a boil. 6. Reduce the heat to low and add the potatoes, carrots, and corn. Simmer for 30 minutes. 7. Add the green peas and simmer for an additional 10 minutes. 8. Taste and adjust the seasoning with salt and pepper. 9. Serve the Sopa de Res warm with fresh cilantro and lime wedges. Enjoy!
