Fat Tire Beer Cheese

This Fat Tire Beer Cheese is super easy to make, and it's full of flavor. The beer adds a subtle hint of sweetness to the cheese, and the spices add a bit of a kick. Ingredients

  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups Fat Tire beer
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 2 cups sharp cheddar cheese, grated
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon sea salt

Instructions

1.In a medium saucepan, melt the butter over medium-high heat. Once melted, add the flour and whisk continuously until a thick paste forms. Continue to whisk for another minute or two, until the mixture turns a light golden color.

2. Reduce the heat to low and slowly add the beer, whisking continuously. Add the garlic powder, cayenne pepper, smoked paprika, and ground black pepper and whisk until combined.

3. Increase the heat to medium and whisk in the grated cheese until melted. Whisk in the lemon juice and salt, and continue to whisk until the mixture thickens, about 5 minutes.

4. Serve warm with crackers or bread. Enjoy!
