-1 lb. chicken thighs -1 onion, diced -1 green bell pepper, diced -2 cloves garlic, minced -2 tablespoons olive oil -2 cups chicken broth -2 tablespoons tomato paste -1 teaspoon chili powder -1 teaspoon cumin -1/2 teaspoon oregano -Salt and pepper to taste -1/4 cup chopped cilantro
Instructions:
1. Preheat oven to 375°F (190°C).
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until they are lightly browned, about 5 minutes.
3. Add the onion, garlic, bell pepper, chili powder, cumin, oregano, and salt and pepper. Stir to combine, and cook for an additional 5 minutes.
4. Add the tomato paste and chicken broth and bring to a simmer. Simmer for 10 minutes.
5. Transfer the skillet to the preheated oven and bake for 20 minutes.
6. Remove from the oven and stir in the chopped cilantro. Serve warm with your favorite sides.
